Have you had a long day and can’t be asked with cooking? Do you just want something quick to eat and to be able to carry on with your day or crash out on the couch? Are you going to eat out in a few hours and don’t want to have a proper meal now, but you don’t want to starve till dinner either? Gotcha. This is the perfect meal for all those situations!
You can prepare it in literally FIVE minutes (yes five minutes!), and you can make it as big or small as you want. So it is perfect for those classic Saturdays where you are having dinner in a restaurant but you woke up late, had breakfast late and it’s also too late for a proper lunch.
I simply prepare a little plate or bowl with this scrummy salad, a piece of toast and I’m ready to carry on till dinner and I’ll still be hungry enough when I get to the restaurant.
You will need to buy a crab stick mix in the fish shop, that normally comes already dressed with a bit of mayonnaise, or you can make your own. At my fishmongers, I get a 500 g box for £5, and I have enough for three portions.
Not only is it super quick and easy to prepare, but it’s also such a light option that I sometimes have it for dinner as well.

Ingredients:
- 150 g of crab stick mix
- 6 Cherry tomatoes
- 1 slice of wholemeal bread
- A pinch of dried wild garlic (you can find it here). You can also use other dried herbs if you don’t have wild garlic (such as dried parsley or Provencal).
- 1 tbsp of olive oil
- A pinch of Himalayan salt
- A pinch of freshly ground black pepper
Method:
- Toast the slice of bread in the toaster for 2 minutes.
- On a plate, put 150 g of crab stick mix.
- Halve the Cherry tomatoes and and add them to the plate.
- Then add the dried wild garlic herb and mix with the crab.
- Sprinkle the extra virgin olive oil and add freshly ground Himalayan salt and black pepper.
I usually buy this mix on Thursday, as weekends can get pretty crazy when it comes to planning my meals, so having a bit of this mix in my fridge can get me off out of a tight spot.
